I’ve been having a little trouble lately…

That is with my diet. You see Wal-Mart has these frozen Italian meatballs in a bag, you get like 3500 of them for about $10.00. Ok, maybe it’s more like 168 but it’s still a friggin’ lot of meatballs. You can make spaghetti and meatballs, meatballs with cream of mushroom, meatball soup, meatball sandwiches, or eat them plain like I do. I also have a weakness for tortillas. I’ll put anything on, or in a tortilla. My kid likes turkey and cheese rolled up in a tortilla and micro waved just enough to melt the cheese, sometimes she uses ham or even smoked sausage, she calls it a “Meat Doobie.” I was watching her make one of these the other day and it gave me an idea. I took an eight inch round flour tortilla, a pretty good amount of shredded cheddar cheese, and six small Italian meatballs. Laid it all out, rolled it up, nuked it for about a minute and behold… “The Meatball Doobie” was born. I have many other variations of it in my head but have yet to try them out. Heck, I might even deep-fry one!

Is the "meat doobie" on your diet? I'll admit anything tastes better wrapped in a tortilla, but it ain't exactly healthy eating. I decided I had to give up either white steamed rice or tortillas and I can't imagine not having white steamed rice so tortillas are out for right now. I did have a tortilla meltdown so I bought corn tortillas (a little better for you than Sonora style flour tortillas). The only thing I've never tried in a tortilla is tuna salad, they tell me it's good, but fish in a tortilla ain't sounding to tasty.

azcg - i should have known that you'd put me in check, but one day a week i can have anything i want as long as i don't get crazy (all though that has turned into about three days a week) but i'm struggling to get back on track. i use to mix tuna with picante sauce and a little chili powder and salt, heat it up and eat it on a tortilla, but plain old fish sounds a little weird, kind of like yuppies eating fish tacos.

oh my, that sounds like heaven on a plate! getting hungry already and it is not even anywhere near lunch time yet!!!
truth be said though, i had tortillas just yesterday. with beans though. and salad and cheddar cheese from Portland! very good for the taste buds but very bad for the love handles.

i have everything in my kitchen right now to prepare mexican food, and it's taunting me... damn those fajitas ! how come the three best things in life, (sex, food, and smoking) can all kill you ?

I'd thought of doing a cookbook, "Real Food for Real People." This actually sounds yummy and would be something I'd put itn there. It's something the kids would eat and love too.

xmichra - and if you were wondering, Yes, I've had Spam on a tortilla also.

babs - i'm a pretty good cook, i can prepare meals that take hours and i can fix meals that take minutes, and some of the fast stuff is just as good as the other. maybe we should start a recipe blog and let all of the bloggers post their culinary classics on it. take care.

Oh no!!! I have been so good, but now you go and talk about Mexican food and I can't resist!! Good thing there isn't a Wal-Mart here.
